Growing up, I HATED sweet potatoes. The only way I ever saw them was in a casserole dish topped with marshmallows and even as a child I thought this was very weird. Flash forward many years and sweet potatoes show up regularly for brunch in this Sweet Potato Hash Recipe.
Ingredients in Sweet Potato Hash
While this hash can take on many forms, the most basic is sweet potato cubes, chopped bell peppers and onions. I love to season mine with either Magic Salt or Mexican Seasoning Blend in my post about Homemade Seasoning Blends. If you want to make it more interesting try adding any of the following:
- Crumbled sausage (cook in the same skillet first if it is raw, then use the cooking fat along with or in place of fat called for in recipe)
- Chopped green apples (add before covering skillet in step 4)
- Chopped green chiles (use for extra heat instead of bell peppers)
- Chopped cooked beets to make Vegan Red Flannel Hash
- Shredded Chicken and season with Mexican Seasoning (add with peppers and onions.) Top with salsa, guac and ranch dressing
What to Serve with Sweet Potato Hash
Sweet Potato Hash is by nature a side dish but by all means enjoy a big bowl as is as long as you have mixed in some sausage, ground beef or chicken as noted above for protein. But here are some ways to use Sweet Potato Hash if you want to use it in multiple ways:
- Fried Eggs over Arugula with Sweet Potato Hash and Avocado – This is a go to brunch for us.
- Sweet Potato Hash Bowl – Top sweet potato hash with seasoned ground beef or other meat, cooked or massaged kale or spinach, pickled onions, and avocado or guacamole.
- Grilled Turkey Breast with Sweet Potato Hash – Thanksgiving any time of the year, but better.
- Mix into scrambled eggs along with spinach and ham or bacon.
- Sweet Potato and spinach frittata – rather than mixing into scrambled eggs, heat the sweet potato has (if premade) in a skillet then add spinach and ham or bacon. Pour 8 beaten eggs over the top and stir around to cook eggs on bottom. Transfer to a 400 degree oven and bake until eggs are set all the way through. (You can put under broiler if you promise to watch it!)
Make Ahead Sweet Potato Hash Recipe
You can totally make this as part of your meal prep. Follow the directions all the way through but just don’t cook long enough for the peppers or onions to brown or the sweet potato pieces to get too dark. When you are ready to serve, just heat the amount you want in a hot skillet with a little additional fat.

The Best Sweet Potato Hash Recipe | Whole30, Paleo, Vegan
Ghee (Whole30), coconut oil (vegan), or butter
2 large sweet potatoes, cut into 1/2-1″ pieces
1 red or green bell pepper (or 1/2 of each) cut into pieces the same size as sweet potatoes, optional
1 small red or yellow onion, cut the same size as sweet potatoes, optional
- Heat chosen fat in a large skillet over medium-high heat.
- Add sweet potatoes in a single layer and don’t move them for 4-5 minutes.
- Season with Magic Salt then flip as many sweet potato pieces as possible and cook for another 2-3 minutes without touching them.
- Cover with a lid for a few minutes to give the sweet potatoes a chance to cook through.
- Add the peppers and onions and another sprinkle of Magic Salt.
- Toss everything together to crisp up sweet potatoes and cook the peppers and onions.
