I’m over the whole Pumpkin Spice thing and we haven’t even gotten to the actual season for it yet! However, a simple statement from on of my gluten-free clients caused me to get over myself and create something awesome, even if Pumpkin Spice related! “I love pumpkin bread but I can’t eat it so I don’t even make it” That was it. That became my mission. She must have gluten-free pumpkin bread and it had to have good ingredients like coconut oil and maple syrup instead of the typical vegetable oil and sugar. The resulting bread, toasted and spread with sweet Maple Walnut Butter, tasted more like a dessert but is certainly virtuous. Make this and you will find it not only fills your body but feeds your soul with the comfort we all seek with the chillier Fall weather.
